How to Make Perfect Buttercream

Good buttercream can elevate your cake. It should be light and fluffy and melt in your mouth. I want to sho you how to make perfect buttercream because we’ll be needing it in one of my upcoming tutorials.

The buttercream is used for cake decoration, connecting the cake layers or cake icing where you cover the whole cake in butter to create a smooth surface.

Supplies

  • electrical whisk or kitchen robot
  • 250 g of softened unsalted butter
  • 1 1/2 cup(100 ml) of powdered sugar

optionally also:

  • 1 tsp of vanilla extract
  • ingredients that add color and favour
  • colorant

How to Make Perfect Buttercream

Put the softened butter in a bowl and start whisking it on low speed, after two minutes switch to a faster speed and then keep alternating between slow and fast everz minute. Don’t whisk at highest speed and don’t use a blender. Once in a while, scrape the butter back to the center of the bowl to make sure all of it gets whisked.

You should whisk for at least 7 minutes. You need to get air into the butter to make the resulting cream light and fluffy, so be patient.

After at least 5 minutes add sugar and optionally also vanilla and other ingredients. Those, however, can change the consistency of your cream, so you might have to add butter or sugar.

If the cream is too soft, leave it in the fridge for a while. The cream should aproximately double in volume. When it’s done, fill the icing tool. The consistency is ideal to decorate a cake and when you place the decorated cake into the fridge, the shapes will harden nicely.
